since this year, we won't be home to celebrate my mom's birthday- we decided to send a little lemon love note. these cake-like cookies are easy peasy and who doesn't love a little treat in the mail? happy birthday, momma!

1 box lemon cake mix*
1/3 cup of oil (you can also sub 6 tbsp of melted butter if you don't have oil. just let cool for a few minutes before adding to the batter.)
1 1/2 teaspoon vanilla extract
1 cup powdered sugar, sifted
1 tsp cornstarch

preheat oven to 375 degrees.
in a medium bowl, whisk the cake mix to remove any lumps. when complete add the oil (or cooled, melted butter), eggs, and vanilla extract. mix well until the ingredients are fully incorporated and the dough is uniform.
put the powdered sugar and cornstarch into a small bowl and whisk to combine. drop tablespoons of dough into the powdered sugar mixture, roll it around and form into a ball. place on the cookie sheet and bake for about 8-10 minutes, removing when the edges just begin to brown.
transfer to a wire cooling rack- serve at room temperature.
*if lemon isn't your deal, you can substitute other cake mix flavors (red velvet, chocolate, vanilla, etc.)
