for the days when i didn't think far enough ahead to get homemade bbq rockin in the crock pot (or on the smoker), i need a lightning-fast alternative. (like um, maybe on the 4th of july?! whoops.)
thankfully, this tender version of pulled chicken can be whipped up on top of the stove in about 30 minutes, and it's simple as can be.

3-4 chicken breasts, thawed
2 bottles bbq sauce

place the chicken in a large saucepan on medium-high heat. pour in bbq sauce and enough water to cover the chicken breasts.
bring to a boil, then reduce heat to a simmer. simmer for 20 minutes, until chicken is cooked through. remove breasts from the pot into a bowl, allow to cool slightly.
shred with two forks, and drain if excess moisture has accumulated in the bowl. add extra bbq sauce and stir to combine. serve on a bun topped with a tiny bit more sauce and your favorite summer side dish. (in our case...potato chips. i wasn't joking about this being last minute.)
