it’s always a mad struggle for me to get my greens in, and i’ve found one of the easiest ways to do so is to add some quick healthy veggies as a side to a meal.
this “recipe” [for a lack of a better word] is so quick, and so simple that i really have no excuse. i usually eat/serve asparagus alongside some thick, bone-in pork chops, pan-sauteed chicken, or in a stir fry. and for just the two of us i can usually get at least two meals (or one dinner and two lunches) out of one bunch. asparagus isn’t the kind of thing you eat a great big pile of.

fresh asparagus, ends trimmed
salt + pepper
optional: parmesan cheese

pour a little evoo in your pan and heat over medium heat. once hot, add asparagus and use a wooden spoon to gently roll the spears over to get them coated in oil. season with salt and pepper, and continue to sautee for a couple minutes, until asparagus is tender.
remove from the pan with a slotted spoon, crack some additional black pepper over top, squeeze a few drops of fresh lemon over the veggies, and sprinkle with parmesan cheese if desired. you can serve garnished with a lemon slice if you wish. that’s all!
