snowy saturday

snowpocalypse continued.

snow days are new to me but there’s something kind of special about being forced to shut down and spend a slow leisurely morning at home.

in honor of that occasion i made pancakes (something so ordinary, yet i rarely seem to get around to actually doing it), alongside some berries and milky coffee - just the way i like it.

also call me crazy, but there’s something just so pure and light and bright about a snowy day.

we had our first [and maybe last???] snow of the season yesterday, and woke up to a neighborhood blanketed in white, fluffy snow. i’ve been on an oatmeal kick as of late, which was extra perfect and warm on this chilly, snowy morning. (and don’t the coconut flakes look like snow?!)

| ingredients |
1/2 cup oats
1/2 cup milk*
1 tablespoon brown sugar

optional additions:
bananas
blueberries
strawberries
sprinkle of cinnamon
maple syrup
unsweetened coconut chips

*you can use up to 1 cup of milk, but i’m weird about mushy textures and prefer my oatmeal a little “drier”, so i use less.

heat oats, milk and sugar together over medium heat, stirring occasionally until desired consistency is reached and oats are cooked, about 5-10 minutes. transfer to a bowl, top with favored toppings (i did a sprinkle of cinnamon, coconut chips and a few banana slices this am) and serve immediately.
