simple suppers: mushroom risotto and green beans

when we lived in texas a local restaurant served a butternut squash risotto that was out of this world. traditionally anything rice-based doesn’t exactly scream flavorful, but their dish changed my mind. with the right ingredients and the proper seasoning risotto can become downright craveable.

I love this recipe by the stay at home chef for her attention to the subtleties that make a great risotto, such as texture and seasoning.

top with shaves of fresh parmesan.

pairs well with green beans almondine and a cold glass of house white.
